● About Gin no Iroha
This rice variety is the first new sake-specific rice introduced in Miyagi Prefecture in approximately 20 years, following the development of Kura no hana. Gin no Iroha is a cross between Miyagi Prefecture’s high-yield rice “Genkimaru” and Yamagata Prefecture’s sake rice “Dewanosato.” It boasts excellent cold resistance and yield, perfectly suited to Miyagi’s climate. Its large grains and high shinpaku (starchy core) expression rate are standout characteristics.
