Rather than enhancing the aroma of this sake through the kobo (yeast) just because it’s a daiginjo, our brewers focus on the flavor profile of the rice and draw flavor from the rice core itself.
The pleasant aroma of bananas and melons is immediately followed by a pineapple-like freshness.
The finish features a mellow sweetness with a refreshing acidity that leaves a gentle aftertaste.
It is a versatile sake that can be paired with Japanese, Western, and Chinese cuisine.
