This honjozo has a mild banana-like aroma which is balanced with a poignant sharpness.
Eluding more complexity than “Atagonomatsu Honjozo”, its able to further enhance the meals it pairs.
This is a sake that can be enjoyed until the very last glass.
Why is Betsushikomi Honjozo special?
At the original brewery, there was a tank that seemed to always produce the best batch of sake. That tank was Tank No. 63.
Therefore, the sake brewed in the Tank No. 63 was sold as “betsujikomi” or “separately brewed”.
Although we no longer have the same tank, No. 63, at our new brewery, we continue to only use our best sake batches for this betsujikomi honjozo to honor this sake’s history. Moreover, we continue to adorn bottles of this sake with a “Tank No. 63” label.
